Let's be real for a second. Soup dumplings don't make any sense. The Chinese have created this tasty little invention and somehow defied the laws of physics. There is real, hot soup with meat inside a thin dumpling skin? How does that work?

Of course, there are countless videos online of awesome ways to make soup dumplings at home. But we wanted to go straight to the source—at least, the closest source we could without traveling all the way to the Shanghai Wuxi region of China.

And so, we went to Manhattan's Chinatown and asked three chefs exactly what's inside of these tiny pockets of goodness by using the Chinese we picked up in a Fluent City Chinese class...
